Almanac Passion Project Sour:
Passion Project is our latest experiment: a combination of exotic ingredients and processes to create something crazy delicious and original. In addition to Brettanomyces, Saccharomyces, and Lactobacillus, this beer was fermented with Pichia—a yeast rarely found in beer. Carefully controlled, it can unleash intense tropical aromas and flavors. We added ginger, grains of paradise, and passionfruit to this farmhouse ale, aged it in oak barrels with cedar spirals, and dry-hopped it with Citra, Mosaic, and Galaxy hops.
Ladyface Derailleur Biere de Garde:
Part of our Ingenuity Series of Barrel-aged Inventions, Dérailleur®” bière-de-garde (“beer for keeping”) is a deep golden ale brewed to celebrate the global passion for cycling, and named after a bicycle’s gear-changing mechanism invented by a French cycling enthusiast in 1905. This ale is malty and rustic, with a spicy yeast character. Subtle flavors of French oak were derived from ageing in Rhône varietal Mourvèdre wine barrels over one year. This release is a special blend of vintages; the older barrels provide mild acidity and the yearling contributes the oak and rustic, bready malt character. The resulting blend is an excellent example of a truly French farmhouse-style cellar creation.
Island Barrel Aged Saison:
This Belgian Saison, with its fruitiness and light body, boasts notes of oak and hazelnut with a crisp and extremely dry finish. Aged patiently for seven months in American oak cooperage, this labor of love embraces ester-driven flavors of fruity and spicy, yet still retains a distinct and refreshing character. Pairs well with Spring and Summer. This Saison pairs well with Creme Brulee, cheesecake, cheese and fruit plates, and fresh fruit.
Ladyface Coquine:
Belgian-style Tripel Barrel-aged with Brett, 9.0% ABV co·quine (kō-’keen) n. a tease adj. mischievous, naughty, risqué Coyly hidden in the folds of this golden ale is the Ladyface flagship ale — Trois Filles — a traditional Belgian-style Tripel aged with Brettanomyces bruxellensis in California white wine barrels. The initial honey sweetness is quickly washed away by acidity, and the years of barrel-aging allow the rich flavors of the Brett and oak to take front stage. What began as a flirtation finishes with all the suggestiveness of deep funk and tannin. How risqué.
Phantom Carriage Raspberry Broadacres:
Bright acidity highlights lemon notes and effervescence with hints of oak and a quenching dry finish. Ages well. Cellaring over time results in a more layered sourness with increased funk. This is a sour brewed with lactobacillae, brettanomyces, and raspberries. Aged in oak barrels. This beer develops rich over riped fruit flavors and soft tannic body.
